About Me:
In my initial Bio, I mainly focused on my family and my past.  I would now like to tell you where I am at now.  For many years, I worked 60-70 hours per week investing all my time and energies in two jobs and my home and family.  This left me little time to concentrate on “ME”.  Over time, slowly, without my noticing, I began to slow down and to also gain weight.  As the pounds crept up, I began to slow down, lose energy, experience aches and pains where I never had them before and become very disinterested in things going on around me.  I semi-retired last June with the goal of connecting with and taking care of the long neglected “ME”.  This past June, I joined this wonderful group of very supportive ladies in an effort to meet my goals.  I also made appointments with  my Doctor and Dentist  to  check on my physical well-being.  Because of time constraints and numerous other excuses, I had not seen either the Dentist or the Doctor in over five years.  So far this summer, I have had 15 appointments and have been checked from stem to stern.  Hopefully, when all the test results come in, I will have professional advice on how to turn some of these complaints around.  I don’t need a Doctor to tell me that the excess weight I carry plays a major role in how I feel.  So, by the next time that it’s my turn to write this newsletter, I plan to be a slimmer, healthier, more upbeat “ME”.

Women’s Health:

From what I told you on Page 1, you can see that I shouldn’t be giving out any advice on health issues.  I do like the site Real Age that was mentioned in this forum many times.  Web MD has a weight loss clinic that is quite helpful also.

 

Personally, these are some of the healthy changes I am working on:

·        Having breakfast every day (this is something I have never done)

·        Eating more fresh fruits and vegetables

·        Eliminating soft drinks and replacing with water

·        When socializing with Mary Often,  making a concentrated effort not to imbibe in our favorite drink

·        Get more sleep

Recipes:

Years ago, I belonged to Diet Workshop (similar to Weight Watchers) and this was one of my favorite recipes from their cookbook.  It makes a great one-dish breakfast and tastes like dessert.

·        BREAD PUDDING
Spray small single-serving baking dish with PAM.  Break up one slice of bread in pieces and place in dish.  Peel and slice one apple and place over bread.  Generously sprinkle with cinnamon.  Mix one egg, one cup of skim milk and a little vanilla flavoring and pour over all.  Bake at 350° about 20-30 minutes until done.  YUM

 

Next week is my “Chicken Week”.  These are some of the things I will be making after I boil two whole chickens   …soup, salads, sandwich and main courses.

·        CHICKEN SOUP
Use stock from boiling chickens.  Refrigerate and remove fat from surface when it solidifies.  Add as many fresh vegetables (cut in bite-size pieces) as you choose along with salt, pepper and your favorite seasonings.  When veggies are almost cooked, add meat from one of the cut up chickens.  Occasionally, the broth is not flavorful enough if I am making a LARGE pot of soup.  When this happens, I just add bullion cubes to taste.  Low in calories and fat and delicious.

 

     Bone and cut up the second chicken.  Use it to make the following:

·        CHICKEN SALAD
Mix cut up chicken with low-fat mayo and cut up celery.  Salt and pepper to taste.  Add a few Craisins or chopped walnuts if desired.  Serve in a Pita pocket with lettuce.
I also like curry chicken salad with raisins.

·        CHICKEN GARDEN SALAD or CEASAR SALAD
Top your favorite salad with sliced or diced chicken and serve with lo-cal dressing.

·        Chicken Sheppard’s Pie
Spray baking pan with PAM.  Layer cut up chicken, your favorite stuffing (already cooked) and frozen vegetables (your favorites).  Pour one jar/can of lo-fat chicken gravy over all and cover with layer of mashed potatoes.  Bake uncovered at 350° until heated through.  It’s easy to get carried away with this recipe.  Keep serving sizes in mind when assembling.  This recipe, made with turkey, tastes just like Thanksgiving.  In fact, it’s a great way to package holiday leftovers for a few days later.

·        Easy Chicken Cacciatore
In large skillet, sauté 1/3 chopped onion, 1 clove chopped garlic, 1/3 cup chopped green pepper until soft.  Add ¾ lb chopped cooked chicken, ½ cup whole peeled tomatoes, ½ cup green beans and ¼ teaspoon oregano and salt & pepper.  Simmer 8-10 minutes.
